Cupcakes for Cancer

On Wednesday I entered into a competition with a few friends called Trumped (www.trumped.ca). It is very similar to the show The Apprentice. We have three tasks, with half the teams being kicked out after task 1 and 2. The first task is to raise as much money as we can for the Canadian Cancer Society. Yesterday we baked over 100 cupcakes and hit the streets of Halifax in -14 weather to sell them. It was FREEEEEZZZING! Mac & Cheese

So we had a rugby potluck last night and I decided to make mac & cheese, its super easy to make and very delicious! Usually we have so many cheesy pasta dishes, but last night there was quite a good spread! I didn't get a picture of the mac&cheese all baked and gooey on top, but I got one just before I put it in the oven.

Recipe:
Start off by making the roux, which is a butter and flour mixture that thickens sauces. Melt 6 tbsp butter in a saucepan then add 6 tbsp flour and whisk for about a minute. Then slowly add 3 cups of milk. Let the white sauce simmer for 5 minutes until it gets nice and thick. Add your favourite cheese, 2-3 cups worth. Then add sauce to cooked pasta and mix in a casserole dish. Top with a layer of cheese and bread crumbs and cook at 400 degrees for 15-20 mins. Enjoy!

Chocolate Chip Walnut Bran Muffins

I'm Back! Sorry for the huge hiatus, exams, going home and california kind of got in the way of baking and posting. Lucky me came back from holiday to a B-E-A-UTIFUL red kitchenaid stand mixer (thanks Uncle Peter)!! So I christened it yesterday by making some delicious muffins, that were healthy too!

Recipe:

Whisk together 1 cup wheat bran, 1 1/2 cups whole wheat flour, 1 tsp baking powder, 1 tsp baking soda, 3/4 cup chocolate chips and 1/4 cup roughly chopped walnuts. In a separate bowl blend 3/4 cup milk (I used soy milk), 1 egg lightly beaten, 2 tbsp oil, 1/2 cup honey (or molasses) and 1/2 cup applesauce. Then slowly add the dry mixture to the wet, be careful not to over overmix! Bake at 400 degrees for 15-20 mins. Enjoy!!
